While I was working for Maxey at The Landing Seafoods Restaurants he tipped me on the secret. Raw chicken, when processed takes up a lot of water. This robs it of its natural flavor. Soaking in salt water overnight, it regains flavor. The real trick is how much salt? He would not let me see that one. I had to work it out by trial and error. The old ones always had ways to make you think/learn.
I was @ Ms. Imagene Neal Morrow, now Scott’s home, a few weeks ago. She holds an archive of photos of The Green Hunter Nursery. If I am treated properly, I will get us copies. Ha! Ha! Ha!
